Our Natural Peppermint Bakery Emulsion (Item #0766) can be used as a substitute for our retired Peppermint Flavor Fountain Flavor (#1781). This bakery emulsion is stronger than the retired Flavor Fountain flavor, so it is best to use about ½ oz. per gallon of mix. For soft-serve ice cream we recommend the starting dosage level at .40%.
