• To yield 50 portions 125 mL (1/2 cup) cooked rice : In a stockpot, bring to a boil 3L (12 cups) water. Add 1.5L (6 cups) of rice, 125 mL (1/2 cup) butter or margarine (optional) and 30 mL (2 Tbsp.) salt. Cover tightly and simmer until most of the water is absorbed, about 25 minutes. Stire wll and hold on a steam table at 70C (160F). Fluff rice before serving.
