- 1. Lightly beat 10 egg yolks using a whisk or beater.
- 2. Gradually blend in 700 mL cold water, stir.
- 3. Add 1 kg (full bag) Cooked Pudding and Pie Filling Mix and whisk until smooth.
- 4. Stir this mixture into 2 L rapidly boiling water in steam-jacketed kettle and mix well.
- 5. Cook over medium heat, stirring continuously.
- 6. When bubbles first break the surface, continue to boil and stir for 30 seconds.
- 7. Remove from heat. Cool slightly.
- 8. Pour into individual dishes or cool baked pie shells.
- 9. Product will continue to thicken as it cools. Refrigerate unused portions.
