Also known as black jelly, xian-cao, or leung fan in Indonesia, Taiwan, Hong Kong and other Southeast Asia countries, Grass Jelly is a traditional herbal jello made of mesona chinensis, and a favorite guilty pleasure to eat.

Its smooth, bittersweet herbal texture and taste pairs perfectly with bubble tea drinks, and shaved ice desserts. It can also be served hot as a dessert, and be added toppings such as red bean and fresh taro. To sweeten, add honey syrup, fructose or condensed milk to set off the bitter taste.

How to Make Grass Jelly
Ingredients:
1 can Grass Jelly Syrup
1 bag Grass Jelly Powder
1100g Brown Sugar
7L Water
Directions:
1. Boil 7 L of water with 1 can of Grass Jelly Syrup in a large pot.
2. Add 1100 g of dark brown sugar and 1 bag of Grass Jelly Powder.
3. Stir well until boiling.
4. Make sure there are no bubbles and pour into a bucket container.
5. Set at room temperature until jelly cools.
6. Place in the refrigerator overnight before serving.
