Hollandaise Sauce Mix - 1 X 800 g Tub - Luda Foods - Prepared in Canada

A fine, slightly cohesive, light yellow powder. Prepares an opaque, thick, light yellow sauce. Its buttery flavour is balanced with egg notes.

Drape over eggs benedict, an omelet or a breakfast poutine or pizza. Pour over a piece of fish or steamed vegetables. Use as a mother sauce to create derivatives, such as a Bearnaise or Bavarian sauce. Replace butter and eggs in recipes for muffins and cakes.

Preparation
To prepare:\1.6 L\4.5 L
Salted Butter
or Margarine:\500 g\1.5 kg
Mix: \267 g\800 g
Water:\1 L\3 L
Melt salted butter or margarine over low heat. Blend in the mix, stirring with a whisk. Add water, stirring. Bring to boil. Reduce heat and allow to simmer 1 minute, stirring constantly. Add lemon juice to taste. BEARNAISE SAUCE: For 1 L, add 3.75 mL (~3/4 tsp) of chervil and 22.5 mL (~4-1/2 tsp) of tarragon OR for 4.5 L, add 10 mL (~2 tsp) of chervil and 75 mL (~1/3 cup) of tarragon.
