The ganache and caramel confectionery tray produces slabs that fit perfectly onto the guitar cutter offering uniform and perfect pieces. Made from food grade #304 stainless steel, the ganache and caramel pan for chocolate and confectionery is easy to clean and will last for many years. A non-stick Teflon liner is included, it resists temperatures from: -73°C (-100 °F) to +260°C (+500 °F), and will allow your confectionery product extraction easily without sticking in the tray. The liner is so thin it will not affect the thickness of your product!
The ganache tray is available in heights of 10, 12 or 15mm (0.4", 0.5" or 0.6"). The interior dimensions are 360 mm X 360 mm (14 1/8" x 14 1/8"). Made for confectioners and professional chocolatiers, the pan is also great to use at home.
