Egg Albumen Powder are dried egg whites (pure albumen) and can be reconstituted by mixing the powder with water. The reconstituted powder whips like fresh egg white and because it is pasteurized it can used safely without having the need to cook or bake with it.
Ratio for egg whites:
1 part powder to 7 parts water
1 Egg White is equivalent to - 4 grams (2 tsp) Egg Albumen powder and 30 ml (2 tbsp) water.
Egg Albumen can be mixed with dry ingredients first if desired.
