Containing 29.2% cocoa blended with rich creamy milk, Cacao Barry Blanc Satin possesses a silky smooth texture for extra lusciousness so delicate on the
palate. Our master chocolatier conches the blend to perfection, resulting in Blanc Satin, a white chocolate that accentuates caramelized notes with a hint of the fi nest vanilla. Its principal applications are varied and include confectionery (ganache praline centres, mouldings and coatings), in pastry (such as ganache, mousse or decorations), and in ice cream, sorbets and sauces.
Applications: Special recipe for fine moldings, coatings, pastry ganaches, mousses, pralines interior ganaches, sauces, decorations, ice-creams and sorbets.
