- To yield 60 portions 125 mL (1/2 cup) cooked rice : Combine 2L (8 cups) of rice, 3.75 L (15 cups) of water, 75 mL (1/3 cup) butter or margarine and 30 mL (2 Tbsp.) salt in a stockpot. Stir well. Bring to a boil. Cover tightly. Reduce heat to MED LOW. Cook until tender. Approximate cooking time is 20 to 25 min. Transfer to a steam pan along with all remaining liquid (which will soon be absorbed). Cover and keep hot. Fluff with fork before serving.
