Valrhona’s 48% dark chocolate baton sticks are specifically crafted for viennoiserie, delivering a rich, chocolatey flavour that pairs beautifully with laminated doughs like croissants and pain au chocolat. Designed to remain stable during baking, these batons melt just enough to create a luscious filling while maintaining structure and a clean bite.

Their slightly sweet, full-bodied profile enhances both flavour and texture, making them ideal for croissants, brioche, puff pastry, or chocolate-studded breads.

Each baton measures 8 cm in length and weighs 5.3 g, perfectly portioned for single or double-stick applications.
